Wedding Cakes

I never planned on making wedding cakes... My mom made wedding cakes for friends and family when I was little but I’d never thought of myself as a wedding cake baker, the tiers, the decoration and the pressure always felt too much. But in April 2023, after I made a small cake to celebrate their engagement, my friends Julia and Stephen asked if I could make their wedding cake for 110 people. The bug bit.

It all started when I made Julia and Stephens engagement cake. I really enjoyed the challenge and a few weeks later, “Please will you make our wedding cake?”

The cake had three tiers, vanilla with lemon curd and raspberry jam finished with a nearly naked white buttercream icing. The decoration was focussed around a dried pineapple flower spiral with gold leaf, lavender and thyme accents.

My second wedding cake was a slightly simpler two tier cake. Again vanilla with lemon curd with a blueberry jam. What made this special is that the top tier was entirely vegan but you would struggle to taste the difference. The cakes were made with organic self-raising flour from Cotswold flour

The white and green theme came through in the decoration with olive sprigs, lisianthus, baby’s breath, thyme, allysum and orchids. The accents were pulled together with some silver leaf. Some of the flowers were from Nurtured in Norfolk

South Africa in early April (Summer!) is not really the best place and time to be making a wedding cake in a friend’s unfamiliar kitchen. This double chocolate cake was still one of the best I have ever made.

The vertical lines matched the candles and were a real challenge but I am pleased how they came out. this was especially challenging on the dummy tier as it was so light.

Baby’s breath, penny gum, spray roses and sugar pearls with edible paper butterflies brought the cake home. I really liked the simple spiral top with the two gold rings from the bride’s grandparents’ wedding.

Two wedding cakes in one week started with my most complex three tier cake yet! Lemon cake with lemon curd for the base, chocolate with chocolate ganache and raspberry jam for the second tier, and a personal triumph of pear and ginger with a ginger buttercream top tier - the bride’s choice! These were all transported, iced and doweled, in boxes on my lap, by my feet and in the boot for over an hour to the wedding venue.

Pennygum sprigs and home-grown dahlias, combined with lots of stunning marigolds, cosmos, spray roses and nasturtiums.

My second cake in the space of a week was my first commission cake and the first time I’d made a cake for a wedding I did not attend. Again the bottom tier was lemon cake with lemon curd. The middle was chocolate orange with the most delicious chocolate orange ganache - requested by the groom! The top tier was a classic carrot cake. I loved the icing design that Holly decided on.

Similar to my first cake for Julia and Stephen, this cake had a double spiral of pineapple flowers with blues from borage and corn flowers and pinks from spray roses, cosmos and lisianthus accented with some green mint.
