Ingredients:
225g unsalted butter
2 TBSP cold water
100g dark brown sugar
100g light brown sugar
100g white sugar
1 large egg
1 large egg yolk
2 tsp vanilla essence
1.5 tsp espresso powder
125g strong white bread flour
125g plain white flour
1.5 tsp salt
1 tsp bicarbonate of soda
85g milk and/or white chocolate chips
130g dark chocolate chunks (or a bar chopped)
~1/2 cup chopped hazelnuts (or any nut or none)
Method:
Sift the flour, salt and bicarb in a bowl. Set aside.
In a medium saucepan, melt the butter over a medium heat and bring to a boil while stirring. Boil until brown and smelling like fudge. Remove from the heat, pour into a heatproof measuring jug and allow to cool for 5mins before adding the water and stirring. Set aside to cool to room temperature.
In a large bowl, add the sugar, vanilla, coffee and cooled butter. Cream together until light, fluffy and smooth. Add the egg and egg yolk and beat well. Add the flour mixture and mix until combined - be careful not to overmix.
Fold in the chocolate, chocolate chips and nuts. Using an ice cream scoop or 2 dessert spoons, form balls of dough and place onto baking paper, pressing down slightly. Place in the freezer for 15 minutes to an hour before baking at 180C for 12-14mins.
